What is the smell that comes off MDF, and is it toxic? Can I get non-toxic MDF?

The glue in MDF contains Urea Formaldehyde, which is highly toxic. 

There is a company in New Zealand that makes non-toxic MDF.  MoCo Sustainable Connections in Vancouver, http://www.mocosustain.com/, can give you more information.

A company in the UK sells a primer paint that absorbs formaldehyde and other volatile organic compounds associated with MDF.  After painting a coat of primer on the MDF, the toxicity of MDF is apparently neutralized. See http://www.healthy-house.co.uk/products/mdf_passivating_primer.php.
