"Eating out, eating green: building a more sustainable food system, one take-out/sit-down meal at a time"
André LaRivière, Executive Director of the Green Table Network
What defines a "green" restaurant? It starts with the conscious desire of a growing number of chefs and
restaurateurs for clear, measurable steps to effectively reduce their
operations’ impact on the environment. This seminar will focus on the topic of making sustainable choices when dining out, whether for a take-out or sit-down meal. Participants will also be given tips on how to bring these sustainable initiatives from the restaurant to their home kitchen.
Bio - Andre's first career was as a CBC Radio music and variety producer in his hometown of Winnipeg and points beyond. He then trained at New York’s French Culinary Institute and worked in restaurant kitchens in France before taking up a freelance career as a food journalist in Vancouver, where his columns on food and the food industry have appeared in local and national publications. Along with stints on the boards of Farm Folk/City Folk and Vancouver Farmers Markets, he is currently a member of the City of Vancouver's Food Policy Council. His latest passion is the Green Table Network (www.greentable.net), a certification program to help local restaurants operate in measurably sustainable ways.

Light House: Sustainable Building Centre is located at 1575 Johnston Street, just East of the
Public Market in the heart of Granville
Island. Our centre is on
the second floor and accessible via the glass door and staircase on the
Southwest corner of the building. This event is sponsored by Light House Sustainable
Building Centre and Cascadia Green Building Council, the local chapter of the
CaGBC. Funding comes from Environment Canada and the Real Estate Foundation of
BC.
